Beat your Fear of Beets and fight off heart disease


Beets are high in fiber , rich in nutrients including antioxidants, phytochemicals and are low in calories. Telling this to people doesn’t do the vegetable justice though. At first mention of the word BEET, people often turn their heads in disgust and move on to the next more popular vegetable, or an unhealthy snack, which is a shame because if prepared properly, Beets can be very delicious and sweet. They just need the chance.

The substance called betalain, is an antioxidant responsible for the beets red pigment an also  helps protect your body from oxidative stress damage from free radicals. Beets are also rich in a substance called Betaine, responsible for reducing homocysteine levels, which in higher levels is associated with cardiovascular disease.

 Betaine also improves digestion and increases your metabolism , and the combination of these help protect your heart, decrease chances of birth defect and fight metabolic syndrome , a combination of obesity, high cholesterol , high glucose levels, and high blood pressure, nothing you ever would want, trust me.


So how do we beat our fear of the beet? It's very simple try this recipe and bring out it's natural sweetness and cut that earthy tone that turns so many away.

Ingredients

4 Beets
3 cups apple cider vinegar
1 cup water
1 cup honey
1 cinnamon stick
1 star anise
2 cloves
sprinkle of nutmeg
half of a lemon
olive oil
salt and pepper

Procedure:

Preheat oven to 350 degrees. Lay Beets on a cookie sheet or deep pan and drizzle with olive oil, sprinkle with salt and pepper then put in oven for 15-20 minutes Beets must be soft and skin should peel off with no effort.

When beets are done let cool and remove skin, will peel right off if not put back in oven until a little tenderer. Then cut into the desired size you want I like to medium size dice them.

Put all liquid, lemon and spices in a large pot, add Roasted Beets and bring to boil over medium high heat then reduce heat to simmer and cook for 20-30 minutes until Beets are soft and a tooth pick can be inserted through it easily.

Use over a salad, as a mid day energizing snack, one bite and you will have forgotten why you hated Beets to begin with. Enjoy!
